For the past 8 weeks, 2 days a week I have been practicing yoga and mindfulness with a class of young men during there first period high school class.
Today was our last time together as they move into exams and a new set of classes. Over the weeks we shared grounding meditations, sharing ways to breathe into moments, finding the space to respond rather than react, sharing ways to be mindful,
and yoga. ....Some of our poses were renamed, and others were given perfect sound effects.
There was laughter, a lot of feedback, and a lot of strength.
Our final relaxation and breathe counting were the favorites of the days, and some of the most powerful moments for me to be apart of.
To mark the occasion of change, I made treats. Yummy raw vegan treats. Nut free chocolate chip cookies and Sunflower seed butter chocolates. They were hoping for pizza, but were pretty happy with the cookies. Its the first time I have made both of these as nut free and I (and the guys) was super happy with them!

Sunflower seed butter chocolate balls of fun
3/4 cup sunflower seed butter
1/4 cup tahini
1/4 cup maple syrup
1/2 cup coconut flakes
3/4 cup organic chocolate semi-sweet chips
1 tsp coconut oil.
Mix sunflower seed butter , tahini and maple syrup in a food processor until fully mixed and beginning to thicken. Add coconut flakes, mix. Adding more coconut flakes if the dough is too wet.
Shape into small balls and place on a lined plate.
In a double boiler, melt chocolate ships and coconut oil, until melted. With a fork roll the butter balls in the melted chocolate until fully cover. Ever so gently lift the ball out of the chocolate with a fork and place back on the lined plate. Continue with the rest, being sure to keep the chocolate balls from touching.
Place the balls in the freezer for about 15 minutes, or until the chocolate is set.
I placed the balls in tiny cupcake holders for easy transportation and fancy looks 🙂
Store the balls in a container in the fridge.. they should last 5-7 days, but I doubt they will be around that long!!
